Carbonara is hands down a favorite Italian dish of mine that I never thought I’d be able to make myself. That was until I came across Athena Calderone’s IGTV how-to. If you aren’t following Athena on IG @eyeswoon, take my word for it, you’ll want to. The step by step video set in her beautiful 1800 Greek Revival kitchen is so easy to follow that I had the confidence I could do it.
Spoiler: This was by far one of the best meals I’ve made all quarantine – officially approved by the Mmmm’s of my three year old, Owen and my husband’s heap of a second helping.
A perfect plate reserved for Sunday Supper, bucatini tossed in a silky egg parmesan sauce and topped with lemon zest. Delightfully unexpected, the lemony zest seemed to instantly transformed this dish from traditional fall family dinner to a spring time soiree must.
