
If you’ve been following me for a while, you know much I’ve loved getting lost in the kitchen these days. Nothing has filled me up quite like a home cooked meal for my little fam.
A real crowd pleaser was this Pot Roast — getting a meal that whole family enjoys can be tough with a picky almost four year old and one year old baby.

Ingredients
2.5 lb beef chuck roast
2 lb small red potatoes
Bundle of carrots
One large yellow onion (cut into 8 wedges)
1/2 teaspoon coarse salt
1/2 teaspoon Uncle Chris’s Seasoning
1/2 teaspoon fresh ground pepper
2 cups beef broth
1/2 cup red wine (optional)
Directions
Clean, peel and chop your carrots into thirds. This not only makes for even portions but will also look pretty on the plate. Set aside.
Chop your onion into 8 wedges
Throw all your veggies into the pot (off).
Season both sides of your beef with the salt, pepper and Uncle Chris’s Gourmet Steak seasoning. Place on top of veggies.
Pour in beef broth and wine. Cover and cooke on high for 6 hours (or low for 10 hours).
Transfer roast to a cutting board and cut against the grain. Place vegetables and meat on to a serving dish and serves with pan juices.
